Roasted Roma Tomatoes

Serves: 4

8 Komienski Roma Tomatoes, cut in half & seeds removed
¼ cup extra virgin olive oil
2 tbsp chopped garlic
1 tsp chopped fresh parsley
1 tsp chopped fresh basil
1 tsp chopped fresh oregano
1 pinch of salt & pepper to taste
½ cup crumbled feta cheese


Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, toss together the tomatoes, olive oil, garlic, parsley, basil, oregano, salt and pepper.  Place the tomatoes cut side up on a parchment lined baking sheet.  Sprinkle each one with about 1tbsp feta cheese.  Bake for 15 minutes.  Serve and enjoy!
